I’ve been making this meatloaf for years. Adapted from an awkward Weight Watcher’s recipe that used only 10 oz of turkey, I’ve tweaked it to work well with a one pound tube of Jennie O frozen ground turkey. This is a great way to sneak more veggies into your diet or spring them on unsuspecting kiddos. Using a Pampered Chef Mandolin makes shredding the zucchini a snap. Try this in the Pampered Chef Stoneware Loaf Pan and you’ll be hooked. Note the addition of Garlic Mashed Potatoes and a steam veggie to round out this meal.
I’ve also smooshed 1/2′”slices of this meatloaf in a hamburger bun to satiate my craving for a burger. I’m not a big ketchup lover so I dress my burgers with horseradish mayo or spicy brown mustard. Easy and much healtheir than fast food.
- 2 teaspoons olive oil
- 1 cup shredded zucchini
- 1 whole onion, diced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black or white pepper
- 1 pound ground turkey (20 oz package works well too)
- 3/4 cup breadcrumbs (regular or seasoned)
- 1 egg, beaten with a fork
- 3 tablespoons tomato paste or ketchup
Preheat oven to 375 degrees and spray a 9×5 inch loaf pan with non stick spray.
In a medium non stick skillet, heat the oil until hot but not smoking. Add the onion, zucchini and spices and saute 3 to 5 minutes until tender. Remove from heat and allow to cool slightly. Transfer to a large bowl, add the remaining ingredients and stir until blended all the way through.
Pour mixture into loaf pan and bake until browned on top and cooked all the way through. Remove from oven and let stand 5 minutes before slicing.
